Excerpt: "Not just any ham and cheese: Prosciutto di Parma and Parmigiano-Reggione are the king and queen of all hams and cheeses, royalty born in pre-Roman times.
...You could always buy Parma and San Daniele prosciutto but they were domestic imitations...As all originals, Prosciutto di Parma costs more than the copy but many food lovers believe that the difference is worth it.
"We now sell as much Italian as Canadian prosciutto, even at twice the price," said Pat Nicastro, owner of La Bottega in the ByWard Market. "We were the first to stock it in Ottawa a year ago. Then it cost $49 a kilo. Now we sell five legs a week and could drop the price to $39."
