Ingredients for 6 persons:
3 firm but not very ripe tomatoes, 300g buffalo mozzarella cheese, 6 anchovy fillets, 6 small basil leaves, 12 pitted green olives, extra virgin olive oil, salt, pepper and oregano.

Utensils:
a jagged-edged knife and a heat-resistant tray

Method:
1. Wash the tomatoes and slice evenly.

2. Cut the mozzarella into evenly sized bits.

3. Cover the bottom of the dish with some oil, salt, pepper and oregano and then cover with alternate slices of tomato and mozzarella.

4. Sprinkle with salt, pepper, oregano and some oil, and then top with the anchovy fillets, basil leaves and olives.
